Description
- General description: Dimethyl trisulfide, belonging to the class of sulfur compounds,[1] is a volatile aroma compound, reportedly identified in Parmigiano Reggiano cheese,[2] roasted sesame seed oil,[1] alcoholic beverages,[3] Brussels sprout, cabbage, cauliflower,[4] commercial rice cakes, etc.[5] It is also reported to be identified as a potential marker for poultry spoilage.[6]
- Application: Dimethyl trisulfide may be used as an analytical reference standardfor the quantification of the analyte in the following: Parmigiano Reggiano cheese using ion-exchange chromatography and gas chromatography coupled to mass spectrometry (GC-MS).[2]Rabbit blood samples using gas chromatography coupled to mass spectrometry (GC-MS).[7]
