- Application: Papain from papaya latex has been used:in the enzyme cocktail to evaluate the efficacy of B complex vitamers liberation from nutritional yeast powder[1]in the enzyme mixture for the digestion of bovine milk samples for the analysis of three vitamin B1 molecules[2]as a biocatalyst for the hydrolysis of (R,S)-naproxen 2,2,2-trifluoroethyl ester in water-saturated solvents[3]
- Biochem/physiol Actions: Papain papaya latex has antifungal activity against C. albicans. It is a cysteine protease that cleaves peptide bonds of basic amino acids, leucine, or glycine.. The pH optimum is 6.0-7.0. Papain hydrolyzes esters and amides. Papain consists of a single polypeptide chain with three disulfide bridges and a sulfhydryl group necessary for activity of the enzyme.
- Quality: Not standardized with lactose or other adulterants.
- Unit Definition: One unit will hydrolyze one micromole of N-alpha-benzoyl-l-arginine ethyl ester (BAEE) per minute at pH 6.2 at 25 deg C.
